Cut the unpeeled ginger into 2-3 mm wide slices and place in a pot / cup. Boil the water (kettle) and pour over the fresh ginger. Let the ginger steep for 10 minutes and then take it out. Add the juice of the lime and the honey and stir well. If you like, you can add 2 - 3 fresh leaves of mint.
In autumn / winter perfect to keep warm and healthy. Tastes totally refreshing even in summer. I prepare the tea the evening before, leave it in the refrigerator overnight and then drink it cold the next day.
