Instructions

  1. Peel the watermelon and, if there are any stones, remove the stones. Then cut the melon into cubes.
  2. Dice the feta cheese and the cucumber as well. Cut the spring onions into fine rings and finely chop the parsley.
  3. I strongly recommend that you also chop mint and add it, it makes the salad even fresher and is particularly tasty in summer. The amount is of course variable depending on taste.
  4. Mix well the olive oil, white balsamic vinegar and a few dashes of fresh lemon juice, salt and pepper.
  5. Then mix all the ingredients together, season to taste again and refrigerate for around 20 - 30 minutes or until eaten. Enjoy the salad well chilled on hot summer days.
