Finely chop the fresh mint so that it can develop its aroma. Mix with the Greek yogurt, sea salt and freshly ground pepper.
The whole thing gets a certain freshness from the abrasion of an unsprayed lemon peel. However, this is a matter of taste. You can also add a few squirts of lemon juice.
The whole thing is best prepared a day before consumption. This allows the mint to develop its aroma nicely.
This dip goes perfectly with grilled meat of any kind. It can also be enjoyed simply with a fresh baguette or with a Turkish flatbread.
