Instructions

  1. Wash and peel the white asparagus, just wash the greens. Cut off the ends and cut the asparagus into pieces approx. 4 cm long.
  2. Arrange the ham or salmon slices decoratively on a platter, drizzle with the olive oil, spread the juice and zest of half a lime on top. Roughly chop the herbs and sprinkle over ham or salmon. Let it flow.
  3. Heat the butter in a large pan or wok and fry the asparagus pieces over medium heat for 10-15 minutes, stirring frequently, until they are cooked but still firm to the bite.
  4. Finally, add the juice and zest of the other half of the lime to the asparagus. Season to taste with salt, pepper and a pinch of sugar.
  5. Place the asparagus on top of the ham or salmon. Decorate with parmesan shavings and sprinkle with coarsely crushed pepper.
  6. Serve with fresh Italian or Greek white bread.
