Put the green chillies and garlic in the mortar with a pinch of salt and crush / puree.
Heat the oil in a wok or a high pan. Add the chilli-garlic paste and stir-fry for approx. 1 min. Add the meat and fry for another 1 minute.
Add the red chillies, oyster, fish and soy sauce, stir-fry for 2 minutes. Mix in the basil, cut into pieces and cut coarse leaf stalks, and serve immediately with fragrant rice.
