Instructions

  1. Wash the aubergine and cut across into 1 cm thick slices. Sprinkle these with salt and let stand for a while.
  2. Dab the escaping water and fry the aubergines in a non-stick pan over medium heat in plenty of olive oil. Brush the aubergine slices with the mint oil about 5 minutes before the end.
  3. The aubergines can be served warm or cold, e.g., at a buffet, eat. If you want or should save fat, you can also cook the aubergines in the oven.
