- Cut the aubergines into slices and roll them in flour. Fry until golden brown in hot oil, then lay out on kitchen paper to degrease.
- Chop the garlic cloves and mix with the yogurt mayonnaise. Cut the tomatoes into slices.
- Put a dollop of garlic mayonnaise on each eggplant slice and place a tomato slice on top. Garnish with parsley or other herbs.
- Can be prepared well and is therefore ideal for the summer party buffet.
