Instructions

  1. Cut the aubergines into slices and roll them in flour. Fry until golden brown in hot oil, then lay out on kitchen paper to degrease.
  2. Chop the garlic cloves and mix with the yogurt mayonnaise. Cut the tomatoes into slices.
  3. Put a dollop of garlic mayonnaise on each eggplant slice and place a tomato slice on top. Garnish with parsley or other herbs.
  4. Can be prepared well and is therefore ideal for the summer party buffet.
