Heat the oil in a coated pan. Cut the tomatoes into slices, add them to the pan and braise them.
In the meantime, fry the bacon in strips in another pan (not too long - otherwise it will be dry and hard).
Beat the eggs and place in the pan over the tomato slices. Fry over medium heat until a light brownish edge has formed and the egg yolk is just firm. Sprinkle with salt, cayenne pepper, chopped herbs and slide out of the pan onto two plates. Serve garnished with strips of bacon.
