Peel onion and garlic and chop finely. Cut the bacon into strips. Heat a tablespoon of olive oil in a saucepan and sauté the onion and garlic in it. Dust with flour and sauté briefly. Deglaze with milk and cream and bring to the boil briefly. Add the vegetable stock and simmer for about 5 minutes.
In the meantime, cook the gnocchi in boiling water for 2-3 minutes according to the instructions on the packet. Drain the gnocchi and fry in a pan in a little olive oil, turning for about 5 minutes. Add the sliced bacon and fry briefly.
Add about half of the parmesan to the sauce, stir and let melt. Season to taste with salt and pepper. Pour the sauce over the gnocchi and stir gently. Scatter the parsley and the rest of the parmesan on top.
This dish also tastes very good with tortellini instead of the gnocchi.
