An insanely delicious dessert made from absolutely simple and affordable ingredients. Mannikin with curd filling, fried in a pan, is a traditional dish in many Ukrainian villages; it is very simple and quick to cook them. Delicate pies are made from semolina porridge with curd filling inside.
For the filling, mix cottage cheese (I recommend taking fat and wet so that it keeps its shape well), raisins (pre-soaked in boiling water and dried), and vanilla sugar. You can also add regular sugar to taste. Stir until smooth.
Mix the egg with salt and sugar until smooth.
Prepare semolina porridge. Add vanilla sugar, regular sugar, and salt to the milk. Bring milk to a boil.
Into boiling milk in a thin stream add semolina. Stir constantly, cook for 3-4 minutes, until thickened. Cover the pan with the porridge with a lid. It is very important that the semolina is thick and hot, otherwise nothing will work.
Sprinkle the surface of the table very generously with flour. Soak a tablespoon in cold water and put 1 tablespoon. a spoonful of semolina for flour.
Sprinkle with flour, quickly form a small cake out of semolina.
Place the curd filling in the center of the cake.
Pinch the edges of the flatbread and form a boat-shaped pie. You need to do everything while the semolina is hot. If the porridge cools down, nothing will work. Therefore, you need to work very quickly, and cover the pot of semolina with a lid each time so that the porridge does not cool down. I got 9 manniks.
Pour the egg mixture into a convenient bowl. Dip the manna in the egg.
Fry manniks with cottage cheese and raisins in a pan with vegetable oil until golden brown on both sides.
Put the finished manniks on paper towels so that excess fat is absorbed. While the manna is still warm, grease them with butter and serve.
