Cook the pasta according to the instructions on the package and let it drain.
Cut tomatoes, avocado and sheep cheese into small pieces. Drizzle the avocado pieces with lemon juice.
Cut the spring onions into rings and sauté briefly in the oil in a pan, beat in the eggs, season with a little herbal salt and stir. When the egg mixture has hardened, add the pasta and fry for about 2 - 3 minutes. Deglaze with a little soy sauce and remove from the stove.
Stir in avocado, sheep cheese and tomatoes and season with pepper, salt and chilli to taste. Sprinkle with chives and serve lukewarm.
