- Cut the peeled, halved shallots into thin slices. Cut the bacon into strips, peel the cucumber, scrape out the seeds and then cut into small cubes.
- Also cut the peeled potatoes into small cubes and fry them gently in clarified butter so that they are crispy on the outside and soft on the inside.
- Then drain the potato cubes on kitchen paper.
- Put the lemon juice, salt, pepper and oil in a small screw-top jar and shake vigorously.
- Sauté the shallots and bacon in the remaining clarified butter, add the fried potatoes and cucumber cubes, heat and season with salt and pepper.
- Finally, mix in the chives and rub some horseradish over them. After serving, drizzle with the lemon vinaigrette.
