Instructions

  1. Cut the peeled, halved shallots into thin slices. Cut the bacon into strips, peel the cucumber, scrape out the seeds and then cut into small cubes.
  2. Also cut the peeled potatoes into small cubes and fry them gently in clarified butter so that they are crispy on the outside and soft on the inside.
  3. Then drain the potato cubes on kitchen paper.
  4. Put the lemon juice, salt, pepper and oil in a small screw-top jar and shake vigorously.
  5. Sauté the shallots and bacon in the remaining clarified butter, add the fried potatoes and cucumber cubes, heat and season with salt and pepper.
  6. Finally, mix in the chives and rub some horseradish over them. After serving, drizzle with the lemon vinaigrette.
