Instructions

  1. Cook the short grain rice according to the instructions on the packet. Mix with parmesan, butter and an egg.
  2. Mix the second egg in a deep plate, lightly salt and pepper. Cut the mozzarella into small cubes.
  3. Let the rice cool and shape into 8 balls. Make a depression in the balls and fill with mozzarella. Dust the rice balls with flour and bread with egg and breadcrumbs.
  4. Fry in portions.
