Instructions

  1. Cut the apples unpeeled into approx. 5 mm wide slices, remove the core and then dice. Peel the onion, cut in half and cut into fine strips.
  2. Bring the lentils to the boil in a saucepan with water and 2 teaspoons of salt and let simmer for 4 minutes over medium heat. Meanwhile, mix 6 tablespoons of vinegar with 12 tablespoons of oil.
  3. Drain the lentils and put them back in the saucepan. Stir the oil and vinegar mixture into the still wet and hot lentils. Add the apple cubes and season everything with salt and pepper to taste. Keep covered and warm.
  4. Carefully cut the salmon fillets from the skin and divide into bite-sized cubes.
  5. Heat 4 tablespoons of oil in a coated pan and fry the salmon cubes over a high heat for about 4 minutes until crispy. Turn the salmon only once. Then season the salmon with salt to taste, take it out of the pan and cover it and keep it warm in a bowl.
  6. Put the onion strips in the salmon pan and fry without any additional oil over a medium heat for 2 minutes. Then add 2 pinches of salt, enough pepper and 2 teaspoons of sugar and caramelize the onions over medium heat for about 1 minute.
  7. Wash and dry the lamb`s lettuce.
  8. Arrange the lamb`s lettuce together with the apple and lentil salad on a plate and top with the salmon and caramelized onions.
