Instructions

  1. Cook the rice noodles according to the instructions on the packet. Wash and clean the rocket, wash and halve the tomatoes. Peel and finely dice the onion and garlic, cut the cheese into 4 strips each.
  2. Whisk the egg in a deep plate, place the flour and breadcrumbs on separate plates. Turn the sheep`s cheese first in flour, then in egg and finally in breadcrumbs. Heat 2 tablespoons of oil in a non-stick pan and fry the breaded sheep`s cheese all around for 4-5 minutes until golden brown.
  3. In the meantime, drain the pasta and rinse in cold water.
  4. Heat 1 tablespoon of oil in a pan and fry the onions and garlic in it. Add the tomato paste and sweat. Deglaze with the broth. Add the tomatoes and rocket, simmer for 3-4 minutes, then mix in the pasta. Season to taste with salt, pepper, sugar and nutmeg.
  5. Arrange the rocket and tomato noodles with the baked sheep cheese on plates.
  6. Baby spinach can also be used instead of rocket!
