Instructions

  1. Whisk the eggs and stir into the spinach with the parsley, salt, garlic, pepper and nutmeg.
  2. Heat the olive oil in a pan and sweat the spring onions. Add the spinach and egg mixture and fry (stir!) At a high temperature until the omelette is light brown from below. Serve with sesame seeds.
