- Wash the zucchini and cut into 1cm thick slices. Fry in oil on both sides, remove and set aside.
- Cut the onions into rings and fry them in the same oil.
- Sprinkle with sugar, caramelize and deglaze with balsamic vinegar.
- Now add the onion rings plus liquid to the zucchini, season with salt and pepper.
- Add a few basil leaves and leave to stand in the refrigerator for a few hours, covered.
- A nice accompaniment to grilled food or as a starter.
