Instructions

  1. Wash the zucchini and cut into 1cm thick slices. Fry in oil on both sides, remove and set aside.
  2. Cut the onions into rings and fry them in the same oil.
  3. Sprinkle with sugar, caramelize and deglaze with balsamic vinegar.
  4. Now add the onion rings plus liquid to the zucchini, season with salt and pepper.
  5. Add a few basil leaves and leave to stand in the refrigerator for a few hours, covered.
  6. A nice accompaniment to grilled food or as a starter.
