How to cook fried zucchini with cottage cheese: Cut the zucchini into slices, bread in flour and dip in beaten eggs. Fry in hot oil on both sides. I salt the zucchini a little during the frying process. Squeeze juice from beets and carrots on a juicer (separately).
Rub the cottage cheese through a metal sieve, salt, add a little sour cream, crushed garlic and knead everything well.
Divide the mass in half and add 2 tablespoon to one part. tablespoons of beet juice, and the other – carrots. Spread the cooled fried zucchini on top with a cheese mass, part of the zucchini with one, part with the other. The edges can be decorated with a pastry syringe, or you can use a fork. On the edge of the teeth of the fork we gain the required mass and, as it were, “wipe” the teeth on the edge of the vegetable marrow.
We spread fried zucchini with cottage cheese on lettuce leaves.
