Instructions

  1. Chop the onion, bell pepper and garlic and fry them in a pan with a little oil until they are lightly browned. Put the beans with their juice in the pan and stir everything well. Stir in oregano and chopped jalapeños and continue heating until bubbles appear
  2. Turn off the pan, put everything in the blender and puree. The consistency is a matter of taste. Usually the puree should be thick and correspond to a warm pudding, for example, but it can also be a little drier and firmer. You can control the consistency simply by how much juice from the beans comes into the blender and whether or not you add water to the blender. Season to taste with salt.
  3. The Frijoles Molidos are either eaten simply with rice or dipped with fried corn tortillas or tortilla chips. I think it`s best with fried corn tortillas.
  4. If you don`t want to use canned beans, you can soak the beans the day before and then cook them until soft in about 1 hour.
