Frittata with potatoes and mozzarella is a hearty dish for a family breakfast or even lunch. Plain potatoes, eggs and cheese make a nutritious meal for the whole family! It turns out delicious and unusual!
Wash small potatoes well and boil in their skins until tender, within 15-20 minutes after boiling.
Slice the boiled potatoes into thick slices.
Pour 1 tablespoon into the pan. spoon of oil and heat. Put potatoes in hot oil and fry until lightly browned.
Peel and dice the bell peppers and onions.
Add bell peppers and onions to potatoes and sauté for a couple of minutes.
Beat eggs into a bowl. Finely chop green onions and dill and add to eggs. Add salt and pepper to taste. Mix well.
Heat the remaining oil in a skillet. You can empty the same frying pan in which you fried potatoes with peppers and onions, or you can use another clean frying pan. But choose a frying pan considering that fritat is being cooked in the oven. I have a frying pan with a removable handle (24 cm diameter), so it’s great for the oven. If you have a regular skillet, use a baking dish. Pour the egg mixture into the skillet.
Top with potatoes, bell peppers and onions, spreading evenly.
Cut the mozzarella into large pieces and distribute over the vegetables.
Cook the frittata in the oven at 200 degrees for 15 minutes.
