Sweat the pressed garlic clove and carrots in a saucepan with the oil. Season with the ginger, add the lentils and deglaze with the stock. Cover and simmer over medium heat for about 15 minutes. Then refine with orange juice, chilli, pepper and salt.
If we (two people) are very hungry, we can manage twice as much, then everyone can take another look.
Incidentally, the soup can be warmed up again and tastes best with a wholemeal bread roll or baguette.
