Instructions

  1. Cook the couscous as instructed, allow to cool a little. Add the chopped chives, apricots and desiccated coconut.
  2. Make a salad dressing from salt, pepper, cinnamon, olive oil, orange juice, mustard and honey, best mix with a hand blender, then it will be nice and creamy. Pour the dressing over the salad and let it steep in the refrigerator for about an hour.
  3. Sprinkle the mint over the top to serve.
  4. Also delicious as an accompaniment to hearty meat such as lamb.
