Instructions

  1. Finely dice or chop the onion. Heat the oil in a saucepan and sweat the onion in it until the onion cubes are golden yellow. Add the passata - with or without herbs, the apple pulp and the brandy vinegar.
  2. Mix everything well and simmer gently for a few minutes. Then add the sugar, salt and pepper to taste. If the ketchup isn`t fruity enough, you can add more apple puree or applesauce.
  3. Always add 1 teaspoon brown sugar first and stir well, try again and if it is not sweet enough, add 1 teaspoon brown sugar again. Depending on the type of passata and apple pulp or applesauce, everything already has a different basic sweetness. In addition, everyone likes their ketchup to be differently sweet, so always taste carefully.
  4. If you want, you can use the ketchup z. Refine, for example, with chilli, herbs, garlic and / or cinnamon. This gives the ketchup an exotic note.
  5. After seasoning, let everything simmer gently for about 30 minutes. So that the ketchup is not so chunky, let it cool down after simmering and then puree. I`m using a hand blender here.
  6. I always fill the ketchup in a glass bottle - e.g., in the Passata bottle.
