First make the dressing in a salad bowl. To do this, stir the oil with the honey and mustard. Season to taste with salt and pepper.
The carrots are peeled and grated into the bowl. The red cabbage is cut into small strips and added. (If you like, you can also grate it, then I find it too fine.)
Apple and peach are peeled, cored and cut into small pieces and also added to the salad. Then add the drained corn and mix everything together well.
The salad tastes best when it is left to soak in the refrigerator overnight.
