Instructions

  1. Whisk the eggs and add the milk. Cut the onion into small pieces.
  2. Fry the onion in oil in a small pan at a relatively high temperature and quickly turn it down to medium heat.
  3. Carefully pour in the egg and sprinkle with the cheese. Salt and pepper, dose the salt depending on the type of cheese. Add chilli flakes or freshly cut peppers as required. Now put a lid on the pan and let the mixture harden.
  4. Gently shake the pan in between to check how far the mass has already set. When the mixture has thickened, remove the lid and the omelette can be safely turned over.
  5. Let the color take off on both sides, the cheese will keep it fluffy even when it is well done. Garnish with the cress, in the picture it`s red radish cress.
