Cut the meat noodle and very finely and mix with 2 tablespoons of cornstarch. Fry the onion in the wok until translucent, remove and set aside. Now quickly fry the meat in portions, remove and set aside. If necessary, add more oil.
Briefly fry the chilli pepper, add the onion again, as well as the chopped garlic and the carrots. Caramelize the sugar in the middle of the wok, reduce the heat and stir everything briefly. Add the meat again and let it fry again briefly.
Deglaze with soy sauce and season with sambal oelek. Maybe add a little salt. Basmati rice goes very well with it.
