Drizzle the garlic bulbs with 2 tablespoons of olive oil. Add 2 stalks of thyme and wrap everything in aluminum foil. Bake in the preheated oven on the 2nd rail from the bottom at 200 degrees (gas 3, convection 180 degrees) for 45-50 minutes.
Take out the garlic bulbs and let cool a little. Then loosen the toes from the bulbs and push the inside out with your fingers. Mash the garlic with a fork.
Stir in the rest of the olive oil and season with salt and pepper. Pluck the leaves from the thyme that was retained, chop and fold into the garlic sauce.
