Peel and chop the garlic cloves. Wash the peppers, cut them lengthways and, depending on how hot you want, remove the seeds (hot) or leave them in (very hot) and cut into small pieces. Pour everything into a small bottle, season with spices and herbs and fill up with olive oil so that everything is well covered. Close tightly and let it steep in the refrigerator for at least 2 days. Always top up with olive oil after use and store in the refrigerator. This way the oil can be kept for a few weeks.
