Cut the onions into rings and lightly sear them in butter with a little salt and sugar. When the onions turn lightly brown, they are ready and are placed in a flat baking dish as the bottom layer. Cut the tomatoes into slices and spread them on the onions. Spread the feta in pieces, plates or other shapes over the tomatoes as desired.
The casserole dish is then placed in the preheated oven for approx. 20 minutes at 180 °. Just before the baking dish comes out of the oven, roast the pine nuts in the pan without oil. Sprinkle the pine nuts over the casserole with the fresh thyme.
Finally, the casserole is drizzled with the good olive oil and served with fresh, crispy ciabatta.
