Beat the butter, sugar and eggs until frothy. Gradually stir in the flour and baking powder. Finally add the 2 tablespoons of gin and tonic water to the batter and fold in. Now the batter can be distributed on the cupcake tins. It makes 12 cupcakes.
The cupcakes are baked at 170 ° C for 20 minutes. Then take them out of the mold and prick them with a wooden skewer while they are still hot. Now spread the gin on the cupcakes with a brush.
For the topping, add the lime juice and 4 tablespoons of gin to the soft butter and stir. Gradually stir in the powdered sugar.
Decorate the cooled cupcakes with the topping, lime slices and lime zest.
Tip: I usually prepare a smaller amount of batter / topping myself and bake mini cupcakes. These are easy to eat at parties and go down well.
