Heat the water in a saucepan. Carefully peel the ginger or wash the organic ginger well and cut into thin slices.
Put the ginger slices, cinnamon, cardamom and cayenne pepper in the pan with hot water. Depending on your taste, cloves can also be added here or another ingredient can be substituted. For a slightly more fruity taste, I can also imagine orange juice or slices, but I haven`t tried that myself. Bring everything to a boil, stirring again and again and simmering on a low level with the lid closed for about 5 - 10 minutes. The tea then has to steep for at least an hour. I always turn off the stove and leave the pot on it, but it can also be removed from the stove or poured into a thermos.
If the tea is too strong for you, you can also stir in a little honey. The tea lasts for several days and can be heated again and again.
The ginger pieces and possibly the cinnamon stick or fresh cloves can be removed after the tea has drawn, or left in the tea. Attention, that also means that he is getting stronger.
