Place the tomatoes in boiling water for about 30 seconds, rinse, peel and dice.
The onions are fried in a little hot oil until translucent. Then the diced peppers are added and fried with it. We add the tomatoes and let everything simmer for 15 minutes on a low heat. Finally, the vegetables are seasoned with salt, pepper and basil.
The vegetables are served on boiled rice and with fried meat dishes.
Some also vary the recipe by stirring the cooked rice into the sauce, but it looks nicer when served on top of the rice.
