Dice the mango and smoked tofu, cut the spring onion into slices. Halve the chilli, core and cut into strips. Put the smoked tofu in a container with a lid, add the starch and shake everything well so that the starch is well distributed.
Heat some vegetable oil in a pan and fry the tofu all over until crispy. Turn off the stove and add the teriyaki sauce to the tofu. Swirl everything well until the cubes are glazed all around.
In the meantime, pour boiling water over the glass noodles and let them steep for 5 minutes. Then drain, drain and transfer to a large salad bowl. Combine the sauce ingredients and mix with the glass noodles.
Stir in the tofu, mango pieces and the white part of the spring onions. Divide the salad on bowls. Garnish with the green part of the spring onions, chilli, coriander and peanuts.
