Instructions

  1. I use a medium-sized package of glass noodles.
  2. Wash the chicken breast, pat dry and cut into bite-sized pieces and fry in a little oil on a very high level, so that roasted substances are created but the inside is not yet done. Take out of the pan and set aside.
  3. Wash the vegetables and cut them again into bite-sized pieces. Heat some oil in a pan and fry the onions, peppers and broccoli. When the vegetables have turned a little roasted color, add curry paste, chilli, cumin and curry and fry for 1 - 2 minutes so that the aromas can release their taste. Deglaze with soy sauce. Finely chop the garlic and add to the vegetables.
  4. Wash the bean sprouts and add them to the pan. If necessary, add some liquid (water, vegetable broth or a little more soy sauce, depending on your taste).
  5. The prepared meat is then mixed with the vegetables and soaked in the pan for about 2 - 3 minutes.
  6. Boil and drain the glass noodles 5 minutes before the food is ready to serve. Mix with the meat and vegetables in the pan and season again with salt and the other spices.
  7. Tip: Sweet and sour sauce tastes good with it, but that is a matter of taste.
