Instructions

  1. You probably have to order the ham in advance from a butcher in Germany. The measure of the cup has a capacity of 240 ml.
  2. Preheat the oven to 125 degrees. Score the ham rind diagonally with a box knife (works best). Do not cut too deep. Score the strips about 2 cm apart. Do the whole thing all around, then in the other direction, so that a diamond pattern is created. Now wrap the ham completely in aluminum foil and bake for 3.5-4 hours.
  3. Remove the aluminum foil and carefully peel off the rind, but do not remove it completely. Turn the oven up to 175 degrees. Brush the ham with the whiskey, then brush with mustard. Now wrap the ham with brown sugar. It`s a bit difficult, it`s best to use both hands for it. Fold the rind over again, if necessary secure with toothpicks. Put a meat thermometer in the ham. Put the ham back in the oven, this time without foil and bake (at least 1 hour) until the meat thermometer shows 75-80 degrees.
  4. Take out and let rest for 15 minutes. Arrange on a platter and decorate all around with pineapple slices with a cherry in the middle each.
  5. An excellent sauce can be made from the frying stock.
