Anyone can do raclette. For this side dish, wash and clean half the celery and finely chop the stems. Peel the onions and cut into fine rings.
Heat the oil in a pan and sweat the celery for about 5 - 10 minutes, then add the onion rings and roast everything until golden. Squeeze the orange and finally deglaze everything with the juice. Season to taste with salt and pepper.
Can then be served cold or warm with the raclette.
