Parry the fillet and season with salt and pepper. Heat the olive oil in the pan and fry the fillet vigorously on all sides.
Add the halved shallots, pressed garlic cloves, diced chilli pepper and the thyme sprigs. Mix the honey with the basalmico. Brush the meat with it and place in a roasting tin. Add the fried aromatics.
Cook everything in an oven preheated to 150 degrees for about 20 minutes. Douse the meat frequently with the honey and balsamic marinade.
