Instructions

  1. Wash sweet potatoes and cover and cook in lightly salted water for about 10 minutes over medium heat, then drain, let cool down a little and peel.
  2. Butter a flat baking dish. Cut the sweet potatoes into 1-2 cm thick slices and lay them out in the shape of a roof tile in the prepared shape.
  3. Put the sugar and orange juice in a small saucepan, let the sugar melt over low heat. Stir in butter and let it melt too.
  4. Drizzle this syrup over the potatoes and bake everything in the oven (center, gas mark 2, fan 160 °) for about 20 minutes.
  5. Variation: You can also stir some whiskey and grated lemon zest into the sugar sauce and / or sprinkle chopped pecan nuts over the sweet potatoes before baking.
