Heat the naturally cloudy apple juice in a saucepan.
Peel the oranges and lemon so that the white (it is bitter) remains on the fruit. Squeeze out the juice. Add the juice and peel to the apple juice, cut the ginger into slices and add to the saucepan with the cinnamon sticks, cloves, star anise and allspice. Simmer everything together over a low heat for 20 minutes.
Finally add the gin, a little more or less depending on your taste. Stop simmering now.
