Instructions

  1. For approx. 4 - 6 flatbreads for filling
  2. ATTENTION: Gluten-free baking takes some practice. The gluten-free flour behaves differently than wheat flour. I recommend the flour Mix It from Schär (NOT the bread Mix it !!!). Alternatively, the Lidl house brand is also suitable for this recipe.
  3. Put all ingredients in a mixing bowl and mix carefully. The result should be a creamy dough (like a sponge cake). Gluten-free flour takes a little more time to bind all of the ingredients into a dough. Therefore stir on a low level for 5 - 10 minutes.
  4. Let the dough rise for at least an hour at room temperature. Now cover the bowl with a damp cloth. A tall bowl is advantageous so that the dough does not stick to the cloth.
  5. Prepare a baking sheet with parchment paper. Avoid jarring the bowl with the yeast dough. The dough can collapse.
  6. After the dough has risen, take a ladle / soup ladle, flour / dust it and the surface of the dough. Now carefully and generously skim off the dough. Now carefully place the ball of dough on the baking sheet with parchment paper, flour a little and carefully shape the dough into a flat cake. Depending on the size of the flatbread, the dough is enough for 4 - 6 loaves of bread.
  7. If necessary brush with a little olive oil (focaccia)
  8. Let rise for about 30 minutes. Before doing this, preheat the oven to 200 ° C top / bottom heat. If the oven has steam injection, set it on low. Alternatively, place an ovenproof bowl of water on the floor.
  9. The bread is baked after 10 minutes, bake for a maximum of 15-20 minutes depending on the desired browning. An oven can heat / bake differently. In my oven, the flatbreads are perfect after 15 minutes.
  10. Cut into a bag and top it to your heart`s content, as a doner kebab, Italian with rocket and ham or gyros or as a vegetarian variant with feta and salad.
