Instructions

  1. First, the green beans are cut into pieces approx. 2 cm long and the stems are removed. Then cook the bean pieces in approx. 2 liters of water with 2 teaspoons of salt, depending on the thickness of the beans, until they are firm to the bite. When done, drain into a colander and rinse with cold water.
  2. Melt approx. 50 g butter in a cast pan heated to the highest level (other pans will do the same if necessary) and then add the cooked bean pieces. Then fry the bean pieces until they start to brown. (Make sure that the butter does not turn brown by constantly turning the beans and swiveling the pan.)
  3. Put the bean pieces aside in a small bowl and remove the butter from the pan.
  4. While the beans are frying, cook the gnocchi in salted, boiling water until they float to the surface. Pour the finished gnocchi into a colander, rinse with cold water and let drain.
  5. Heat the pouring pan to the highest level, add olive oil and crushed garlic and let it warm up. Next, add the drained gnocchi and fry until golden brown.
  6. In the next step, cut the salmon into approx. 5 mm thick slices and add to the gnocchi. Now wait until the salmon starts to turn white and crumble. When this happens, add the drained shrimp, stir in and season with 1/2 teaspoon pepper.
  7. Now add the beans to the pan again and fry everything on a low heat, turning about 2 times a minute.
  8. In the meantime, while the gnocchi - salmon - shrimp - bean mixture is cooking in the pan for the last few minutes, melt the remaining 75g butter in a small saucepan and mix with 1 teaspoon flour and a whisk to a smooth mixture. Add 3 teaspoons of horseradish and 2 teaspoons of mustard as well as 50 ml of cream and stir everything into a slightly thick sauce. Season to taste with a pinch of salt. (To prevent further thickening, remove the pan from the stove before adding flour and other ingredients.)
  9. In the last step, arrange the gnocchi - salmon - shrimp - beans on a plate, then form a circle with approx. 3 tablespoons of sauce and finally garnish with chives.
  10. The sauce tastes optimal if you use whipped cream or coffee cream.
