Instructions

  1. Clean the mushrooms and cut them in slices. Clean the spring onions and cut into rings. Peel the onion and cut into small pieces.
  2. Heat the oil in a large pan. Add the onion and sweat. Then add the mushrooms, lightly salt and pepper. As soon as the mushrooms are well seared, add the spring onions. Season with the thyme and then steam the whole thing with the lid closed for about 5 minutes.
  3. In the meantime, the gnocchi are cooked separately.
  4. Now add the beans to the pan (I am using beans that have already been boiled down) and heat. Season to taste with the remaining spices, especially do not skimp on the thyme. Finally fold in the gnocchi. Serve immediately.
