Slice the cooked beetroot and place in a baking dish. Season the slices with salt, pepper, garlic powder and thyme. Then spread the olive oil and honey over it.
Everything is placed in the preheated oven at 160 ° C for about 20 minutes.
In the meantime, chop the cashew nuts with the chilli and some caraway seeds very finely and roast them in the pan. Shape the goat cheese into slices and bread with the nuts.
When the beetroot is ready, place the cheese on top and sprinkle the remaining nuts over the beetroot.
Personally, I`ve had enough with that, but you can also make a mixed salad with it.
