Instructions

  1. Chop the onions into small pieces.
  2. Heat the olive oil in a pan, add the onion pieces and the pressed garlic cloves and roast them until brown.
  3. Put the goat`s cheese talers (the unpicked ones, are available at well-stocked cheese counters, is fresh goat`s cheese) in the pan and fry briefly on both sides over high heat (be careful, it gets soft, has to go quickly).
  4. Add pepper, salt and a few finely chopped twigs with fresh thyme just before the end. At the very end, drizzle the balsamic vinegar over it.
  5. Wash the rocket and cut into bite-sized pieces. Omit hard stems. Spread the rocket out on a serving platter. Cut the tomatoes into slices and spread them on the rocket. Top with the fried goat cheese thalers.
  6. Pour the oil vinaigrette over the whole pan and serve while it is still warm.
  7. It is served with baguette, ciabatta, pide or French country white bread.
