Instructions

  1. Pre-heat the oven to 220 degrees Celsius. If ciabatta is planned as a side dish, work with circulating air, otherwise top / bottom heat is also suitable.
  2. Wash the apples and remove the core with a corer. Cut into approx. 0.5 cm thick slices. One apple slice is required for each cheese thaler. Place the slices in a baking dish and leave in the preheated oven for about 5 - 10 minutes.
  3. Cut the dates into small pieces. Cut the goat cheese roll into slices, between 0.5 and 1 cm thick, depending on the desired number of pieces. Wrap a slice of bacon (possibly folded lengthways) around the outer edge to create a kind of basket. As soon as the baking dish is taken out of the oven, place one of these parcels on each slice of apple. Scatter some colored pepper and thyme on top.
  4. Roast the pine nuts in a small, coated pan, being careful not to burn them. Then pour into a small bowl and set aside. Put the finely chopped dates in the same pan and heat them up a little. Add 1 tablespoon or possibly more of the honey and caramelize the dates a little, then place in a separate bowl and set aside.
  5. Now fill each of the apple, goat cheese and bacon baskets with approx. 1/2 teaspoon of the dates and 3 - 4 pine nuts. The rest will be needed later. Add a little honey if you like. Put in the oven for about 20 minutes. If ciabatta is planned as a side dish, put it in the oven after 8-10 minutes, depending on the manufacturer`s instructions.
  6. In the meantime, wash / clean the lamb`s lettuce, spin dry and serve as a bed of lettuce on large plates.
  7. Prepare the dressing. To do this, put balsamic vinegar and 2 - 3 tablespoons honey in a warmed pan and let the honey dissolve. Then add the mustard and stir until it dissolves. Add a trick of butter (approx. 1 teaspoon) and let it dissolve as well. Then add the orange juice. Season to taste with herb salt, pepper and thyme. With the dressing ingredients, just try out whether you like it more sweet or more acidic. Then use more / less honey and more orange or even lemon juice if necessary.
  8. Take the baking dish out of the oven, spread the apple, goat cheese and bacon thalers on the bed of lettuce. Scatter the pine nuts on top and spread the dressing on top. Grate some parmesan over the top if you like.
  9. Take the ciabatta out of the oven, let it cool and cut into slices.
  10. Note: This dish is suitable as a starter (2 - 3 goat cheese thalers for each plate) and also as a main course (5 thalers per person). Baked ciabatta goes well with it.
