Blanch the chives in boiling water for 2 minutes and rinse.
Mix the honey with a little lime juice. Place one goat cheese per sheet of brick pastry in the middle of the sheet. Brush the cheese with honey and sprinkle with thyme. Fold the edges of the dough over the cheese and tie with a stalk of chives.
Bake the parcels on baking paper in the preheated oven for about 5 minutes until the dough is golden brown.
