Put the flour in a bowl and make a well in the middle. Crumble in the yeast and mix with the sugar. Pour in some water and make a pre-dough. Cover and let rise for 20 minutes.
Put the butter in flakes on top. Gradually knead the egg yolks and salt into the pre-dough. Add the rest of the water. Work everything into an elastic dough and let it rest covered for approx. 1 hour.
Grease the shape. Knead the dough and pour into it. Cover with the cloth again and let rise for 15 minutes. Preheat the oven to 190 ° C.
Sprinkle the bread with water and bake on the lowest rack for 50 minutes at 190 ° C. Then turn off the oven and let it stand for another 10 minutes. Take the bread out of the oven and let it cool down briefly.
Carefully remove from the mold, place on a wire rack and sprinkle with water. The next day, cut off 1 cm thick slices and toast.
