Rinse the goose legs, pat dry, season. Sear in the hot oil in the roasting pan for 5 minutes on each side, remove.
Peel the onions, apples and oranges, chop them roughly and place them in the roaster. Peel and grate the ginger, add with the plums and fry. Pour in the stock, wine and 250 ml of water. Put the legs back in and cook covered in the oven for about 35 minutes.
Take out the meat and keep it warm.
Take out some onion, apple and plum pieces. Puree the rest, strain, add the pieces again. Season the sauce with honey, salt, pepper and coriander to taste. Serve the legs with sauce. garnish if necessary.
