  1. Wash the parsley, spin dry and chop finely. Cut the pretzel roll into small cubes and place in a bowl. Peel the onion and cut into fine cubes. Sweat the onion cubes in a pan with a little oil, deglaze with the milk and bring to the boil briefly. Then add the onion-milk mixture to the bowl with the pretzel roll and mix well. Add the minced meat, egg, oregano and parsley, mix well and season with salt and pepper.
  2. Shape the minced meat mixture into 4 meatballs and fry them briefly but hot in a pan with a little vegetable oil on both sides. Then turn the heat down, add the butter, lemon juice and thyme sprigs to the pan, put a lid on and let the meatballs simmer over a low heat. Turn it over only once.
  3. Arrange the meatballs on plates and serve with vegetables and mashed potatoes, for example.
