Peel the potatoes and put them in a saucepan with water. Add a little salt, bring to a boil and cook for about 25 minutes until cooked through. In the meantime, put the dressing ingredients in a large bowl and stir with a whisk. Also cut the cucumber and the onion into small cubes and add them as well.
If you like, you can cut the potatoes into small pieces immediately after cooking and add them to the bowl with the rest, as the salad is also delicious when warm. Otherwise let the potatoes cool down first.
